Gun-ho for Gumbo!

Hi Connoisseurs! Within the past few months I have made a major change in my lifestyle; I have made the conscious decision to stop eating fast food and to start making my meals at home. Featured in the post is a very simple, light gumbo recipe. Gumbo is a dish that originated in Louisiana that consists of stewed tomatoes, shrimp, vegetables and okra, however this recipe does not incorporate okra. Check out my spin on this 400 year old recipe.


For the gumbo, you will need stewed tomatoes, onion, corn, adobo seasoning, sausage, and shrimp. For the cornbread, you will need Jiffy mix, 1 egg, and 1/3 cup of milk

Sautte onions and sausages in a pan with a bit of EVOO (extra virgin olive oil). Meanwhile have a pot of the stewed tomatoes seasoned to taste with adobo seasoning simmering on the stove.

Blend the Jiffy mix, set oven at 400 F and let bake for 15-20 minutes. I know, I know the cornbread isn't homemade but I have reached chef potential just yet!

Add the sausages/onion, corn, and shrimp to the stewed tomatoes & let simmer for 5-10 minutes.

Serve gumbo over rice with cornbread.
