| For the gumbo, you will need stewed tomatoes, onion, corn, adobo seasoning, sausage, and shrimp. For the cornbread, you will need Jiffy mix, 1 egg, and 1/3 cup of milk |
| Sautte onions and sausages in a pan with a bit of EVOO (extra virgin olive oil). Meanwhile have a pot of the stewed tomatoes seasoned to taste with adobo seasoning simmering on the stove. |
| Blend the Jiffy mix, set oven at 400 F and let bake for 15-20 minutes. I know, I know the cornbread isn't homemade but I have reached chef potential just yet! |
| Add the sausages/onion, corn, and shrimp to the stewed tomatoes & let simmer for 5-10 minutes. |
| Serve gumbo over rice with cornbread. |
